Fudge - Like

I love chocolate, so I make "fudge" now and again.

The thing is, I don't have a proper recipe. It's different every time. The base goes like this:


Slowly melt two bags of chocolate chips (milk, dark, semisweet or a combination) over low heat and add a generous handful of minimarshmallows.

Now the variations.

If you are in the mood for softer fudge add one of the following as the chocolate is melting:

         About 2 Tablespoons butter
         About 1/4 cup heavy cream, soy milk or milk

For flavor, you can add any of these when you add the marshmallows:

         A few fresh mint leaves, ripped into very small pieces
         A 1/2 teaspoon of vanilla, orange or almond extract (or any other extract, I'm guessing)

For texture and change, put any combination of these (up to 1/2 cup total)  when you add the marshmallows.

        Crisp rice cereal
         Unsalted sunflower seeds
          Raisins
          Dried cranberries


Once it is all together, stir. Pour into a greased glass loaf pan and refrigerate for an hour or so. Cut into squares and enjoy.


It's not real fudge, but it can be quite yummy.

  1. This post is definitely going to ruin my diet...why the heck have I never thought to just make my own fudge?! Yummers!
